How to Make Ice Cream Cake
Hello and welcome! We’ve teamed up with a professional chef to show you how to make a perfect ice cream cake. There’s a recap of the ingredients at the end of the film.
Step 1. Coffee mixture. Start by lining a one kilogram loaf tin with cling film. Mix five teaspoons of coffee granule with 600 milliliters of boiling water. Leave for five minutes, then stir in three tablespoons of brandy and 85 grams of sugar.
Step 2. Sponge biscuits. Take 200 grams of italian sponge finger biscuits and put two to one side. You’re going to line the tin with the rest. Dip them quickly in the coffee mixture and line sides of the tin with the moistened biscuits. The biscuits along the side will stand above the rim of the tin.
Step 3. Ice cream. Spoon a layer of ice cream into the tin. Dip the last biscuits into the coffee and place on top end-to-end. Spoon the remaining over then fold over the sticking up sponge fingers to cover the top. Cover with the cling film and freeze.
Step 4. Serve. To serve, turn out on to a plate, strip off the cling film and dust generously with cocoa. Spoon the cream down the center and decorate with chocolate.

small tub double cream, lightly whipped
cocoa for dusting
